WHOLE GRAIN BREAKFAST COOKIES
Prep time : 25 mins • Cook time : 10 mins • 18 servings
INGREDIENTS
• 1 cup walnuts
• 1 ½ cups old-fashioned rolled oats ( not instant )
• ⅓ cup whole wheat flour
• ½ cup ground flax meal
• 1 teaspoon baking soda
• ½ teaspoon salt
• 1 teaspoon ground cinnamon
• ½ cup almond butter
• ¼ cup canola oil
• ¼ cup blue agave nectar
• ⅓ cup brown sugar
• 1 egg
• 1 teaspoon vanilla extract
• ½ cup dried cherries
• 1 cup semi-sweet chocolate chips
DIRECTIONS
• Preheat oven to 375 degrees F ( 190 degrees C ). Line baking sheets with parchment paper .
• Pulse the walnuts in a food processor several times to chop ; continue processing until the walnuts are ground into flour ; transfer to a bowl . Mix in the rolled oats , whole wheat flour , flax meal , baking soda , salt , and cinnamon until thoroughly combined .
• Combine the almond butter , canola oil , agave nectar , brown sugar , egg , and vanilla extract in the food processor and process a few seconds to blend the ingredients well ; transfer the almond butter mixture to a large bowl and fold in the dried cherries and chocolate chips . Mix the walnut-oatmeal mixture into the almond butter mixture ( dough will be very thick ).
• Scoop up heaping teaspoons of dough , and form into balls ; lay the dough balls onto the prepared baking sheets , about 2 inches apart .
• Bake in the preheated oven until lightly browned , 8 to 10 minutes . Remove from oven and flatten the cookies with a spatula . Allow to cool for about 5 minutes on the baking sheets before removing to finish cooling on wire racks .
AVOCADO BREAKFAST BOWL
Prep time : 5 mins • Cook time : 20 mins • 2 servings
INGREDIENTS
• ½ cup water
• ¼ cup red quinoa
• 1 ½ teaspoons olive oil
• 2 eggs
• 1 pinch salt and ground black pepper to taste
• ¼ teaspoon seasoned salt
• ¼ teaspoon ground black pepper
• 1 avocado , diced
• 2 tablespoons crumbled feta cheese
DIRECTIONS
• Stir water and quinoa together in a rice Cookr ; cook until quinoa is tender , about 15 minutes .
• Heat olive oil in a skillet over medium heat and cook eggs to desired doneness ; season with seasoned salt and pepper .
• Combine quinoa and eggs in a bowl ; top with avocado and feta cheese .
Tip : Add or substitute whatever ingredients you have on hand and cook your eggs any style !
GOOD OLD-FASHIONED PANCAKES
Prep time : 5 mins • Cook time 15 mins • 8 servings
INGREDIENTS
• 1 ½ cups all-purpose flour
• 3 ½ teaspoons baking powder
• 1 tablespoon white sugar
• ¼ teaspoon salt , or more to taste
• 1 ¼ cups milk
• 3 tablespoons butter , melted
• 1 egg
DIRECTIONS
• Sift flour , baking powder , sugar , and salt together in a large bowl . Make a well in the center and add milk , melted butter , and egg ; mix until smooth .
• Heat a lightly oiled griddle or pan over medium-high heat . Pour or scoop the batter onto the griddle , using approximately 1 / 4 cup for each pancake ; cook until bubbles form and the edges are dry , about 2 to 3 minutes . Flip and cook until browned on the other side . Repeat with remaining batter .
